Quick answer: The Negroni Sbagliato ('mistaken Negroni') is equal parts Campari, sweet vermouth and dry sparkling wine — about 1 oz (30 ml) each — built over a large block of ice and stirred once, garnished with an orange slice. Mirko Stocchetto created it at Bar Basso in Milan, usually dated to around 1972 (sources range from the late 1960s onward). Bar Basso serves it in an enormous goblet with a single giant ice cube. It went viral in October 2022 after an HBO 'House of the Dragon' promo clip.

Pro tip: Chill your glass and use fresh citrus squeezed the same day. Taste before you pour; a few drops of lime or simple syrup fixes most balance issues.
❄️
Batching: Mix everything except ice and bubbles up to a day ahead and keep it in the fridge. Shake or stir each drink with ice to order. Fresh citrus is best within 24 hours.

Sbagliato Zero

A non-alcoholic red bitter (like Sanpellegrino Sanbittèr or Lyre's Italian Orange) and a zero-proof vermouth replace the Campari and vermouth, and dry NA sparkling wine keeps the drink crisp.

Ingredients

  • 1 oz (30 ml) non-alcoholic red bitter aperitivo (Lyre's Italian Orange, Sanbittèr or Giffard Aperitif syrup diluted)
  • 1 oz (30 ml) zero-proof sweet vermouth alternative (e.g. Lyre's Aperitif Rosso)
  • 1½ oz (45 ml) non-alcoholic sparkling wine
  • Large ice cube and orange half-wheel

Steps

  1. Build. Stir the bitter and vermouth alternative over a large cube in a wine glass.
  2. Top and garnish. Add the NA sparkling wine, lift once with a spoon and garnish with orange.

Bar Basso is an old-fashioned Milan bar on Via Plinio, with wood paneling, waiters in white jackets and a long display of bottles. It’s famous for two things: oversized glasses with enormous ice blocks, and the Negroni Sbagliato.

The ‘Mistake’

‘Sbagliato’ means ‘mistaken’ or ‘wrong’ in Italian. The usual story is that a bartender at Bar Basso was making a Negroni (gin, Campari and sweet vermouth) and grabbed a bottle of sparkling wine instead of gin. The customer liked it, and a new drink was born.

The bartender was Mirko Stocchetto, who took over Bar Basso in 1967. His son Maurizio, who runs the bar today, has told the story a little differently: the sparkling wine had been put in the gin’s spot, Mirko noticed when he picked it up, and decided to keep going. So it was a lucky accident rather than a careless one.

The date isn’t certain. Campari and most sources say about 1972; others say the late 1960s or even later. Treat ‘early 1970s’ as the best estimate.

What Bar Basso Serves

The Bar Basso version is equal parts Campari, sweet vermouth and dry sparkling wine. What makes it memorable is the serve: a giant, heavy goblet and a single huge block of ice, with an orange slice. It’s bitter, slightly sweet, fizzy and refreshing — like a cross between a Negroni and a spritz.

How It Went Viral

The Sbagliato was well known among bartenders for decades, but in October 2022 it became a pop-culture moment. HBO posted a short promo for ‘House of the Dragon’ in which actor Olivia Cooke asks co-star Emma D’Arcy what their drink is. D’Arcy says, ‘A Negroni… sbagliato… with prosecco in it.’ Cooke says, ‘Stunning.’

The clip spread quickly on TikTok and Twitter, people imitated the delivery, and bars across the US and UK reported more Sbagliato orders. Note the line says ‘prosecco’ — Bar Basso traditionally uses a dry spumante, but Prosecco is the most popular choice at home.

Why Home Versions Go Flat
  • Too much stirring. Stirring hard after adding the sparkling wine kills the bubbles. Stir the Campari and vermouth first, then add the wine and lift once.
  • Small ice. Small cubes melt fast and make the drink watery. Use one large cube.
  • Sweet sparkling wine. Asti or ‘extra dry’ Prosecco (which is sweeter than brut) plus vermouth makes the drink sugary. Use brut.
  • Warm wine. The wine should be very cold so the ice doesn’t have to do all the chilling.
The Key Technique: Build It in the Glass

There’s no shaker or mixing glass. Put one big cube in a large wine glass, add the Campari and vermouth, stir to chill, then top with cold sparkling wine and lift once. It takes about 30 seconds.

For a Party

Mix the Campari and vermouth in a bottle in advance and keep it in the fridge. When guests arrive, pour 2 oz over ice and top with sparkling wine. One bottle of wine makes about 15 drinks.

The Mocktail: Sbagliato Zero

Non-alcoholic bitter aperitivos are now easy to find. Combine one with a zero-proof vermouth alternative and dry NA sparkling wine for a drink that’s bitter, bubbly and adult. The big ice cube and orange slice still matter.

Sbagliato vs. Negroni vs. Americano

The Sbagliato belongs to a small family of related drinks:

  • Negroni: gin, Campari and sweet vermouth, equal parts. Strong and bitter.
  • Americano: Campari and sweet vermouth topped with soda water. Lighter and older than the Negroni.
  • Sbagliato: Campari and sweet vermouth topped with sparkling wine. Between the two in strength, with wine’s acidity and bubbles.

If you like Negronis but want something lighter for daytime, the Sbagliato is a good choice. If it’s still too bitter, use slightly more sparkling wine.

Enjoy responsibly — must be 21+.

Frequently Asked Questions

What is in a Negroni Sbagliato?

Campari, sweet vermouth and dry sparkling wine in roughly equal parts, over ice with an orange slice. It's a Negroni with sparkling wine replacing the gin.

How strong is a Negroni Sbagliato?

Much lighter than a Negroni. With no spirit stronger than Campari's ~24%, it comes out around 13% ABV and just under one US standard drink.

Can I order one at Bar Basso?

Yes. Bar Basso, at Via Plinio 39 in Milan, still serves it in its trademark oversized goblet with a single huge ice cube. It's especially busy during Milan Design Week. Prices are moderate by Milan standards, but check locally.

Was it really a mistake?

The legend says a bartender grabbed sparkling wine instead of gin by accident. Maurizio Stocchetto, Mirko's son who runs the bar today, has described it more as a happy accident: a bottle of sparkling wine was in the gin's place, Mirko noticed, and decided to keep going. The date is also uncertain — most accounts say about 1972, others say the late 1960s.

Can I batch Sbagliatos?

Batch the Campari and vermouth together in a bottle (1 cup each for 8 drinks) and keep it cold. Pour 2 oz over ice in each glass and top with sparkling wine to order. Don't add the wine ahead of time.

Why did the Sbagliato go viral?

In early October 2022, HBO posted a promo clip for 'House of the Dragon' in which Olivia Cooke asks co-star Emma D'Arcy their drink of choice. D'Arcy answers, 'A Negroni... sbagliato... with prosecco in it,' and Cooke replies 'Stunning.' The clip spread widely on TikTok and Twitter, and many bars reported a jump in orders.

Is there a non-alcoholic Negroni Sbagliato?

Yes — the Sbagliato Zero below uses a non-alcoholic bitter aperitivo, a zero-proof vermouth and NA sparkling wine.
